Young and Restless Carrot Cake ingredients:

2	cup	flour
1	tsp.	Salt
4		Eggs
1 1/2	cup	Oil
2	tsp.	Baking soda
2	cup	White sugar
1	tsp.	Cinnamon
3	cup	Carrots, grated
		---ICING---
1	pk	soft cream cheese -- (8 ounce)
1/2	cup	butter, melted
2	tsp.	vanilla
1	pk	powdered sugar.

Young and Restless Carrot Cake preparation:

1. Cake: Mix all dry ingredients together.

2. Add oil, eggs, and carrots.

3. Bake in 3 9-inch pans for 30 to 35 minutes at 350 degrees.

4. Cool 30 minutes and hen add icing.

5. Icing: Mix ingredients together until smooth and spread on cake.

6. Garnish with chopped pecans or carrots curls (optional).
