Whiskey cake recipe

Whiskey cake ingredients:

1 lb Carrots -- peeled and cut
-- into 1/2-inch pieces
1 cup Corn oil
1 can (8-ounce) crushed unsweetened
pineapple -- drained
4 large Eggs
1 tbsp. vanilla extract
3 cup unbleached all-purpose flour
2 1/2 cup Sugar
1 tbsp. Ground cinnamon
1 tbsp. Baking soda
1 tsp. Salt
1 1/2 cup coarsely chopped walnuts*
***frosting ***
1 lb Cream cheese, at room temperature
1 1/4 cup unsalted butter -- room temperature
1 tbsp. Fresh lemon juice
2 tsp. vanilla extract
5 cup Powdered Sugar -- Sifted
***GARNISHES***
fresh edible flowers (such as pink roses; optional)

Whiskey cake preparation:

1. Combine all ingredients.
2. Mix 3 minutes.
3. Pour into a well-greased tube pan. Bake at 350 °F for 50-60 minutes.
4. While cake is baking make topping.
5. Melt butter.
6. Add sugar and whiskey.
7. Cook until sugar is dissolved and of syrup texture.
8. After removing cake from oven, poke holes (with a fork) in the top(leave cake in pan while doing this)/ pour some of the syrup mixture over cake.
9. Let cake sit in pan 15-20 minutes.
10. Remove cake from pan and brush remaining syrup on sides and top of cake.
