Walnut Cake 2 ingredients:

1 1/4 cup butter Or margarine
-softened and divided
2 1/4 cup DIXIE CRYSTALS Granulated Sugar, divided
4 large Eggs
1/4 cup Fresh lemon juice
2 tbsp. freshly grated lemon rind
3 cup Cake flour
1 tsp. Baking soda
1/4 tsp. Salt
1 1/2 cup buttermilk
1 pk (16-ounce) frozen unsweetened strawberries, thawed
1 pk soft cream cheese -- (8 ounce)
3 cup DIXIE CRYSTALS 10-X
Confectioners' sugar
2 tbsp. Frozen lemon concentrate, thawed

Walnut Cake 2 preparation:

1. Beat egg yolks with 1-1/2 cups sugar until light lemon-colored.
2. Add nuts, biscuit crumbs, and lemon rind.
3. Beat egg whites until dry and fold into nut batter.
4. Grease two 9-inch cake pans lightly, line them with wax paper, and grease and flour the wax paper.
5. Pour batter into pans and let stand 5 minutes.
6. Bake at 350 degrees for 25 minutes.
7. Remove pans from oven and let stand for 5 minutes.
8. Remove from pans and cool on racks.
9. Whip cream until stiff.
10. Beat in 1/4 cupsugar gradually; add vanilla and beat.
11. Spread jam on top of one layer cake.
12. Place second layer cake on top. Cover sides and top of cake with whipped cream.
13. Sprinkle with additional nuts, if desired.
