Wacky Cake ingredients:

2/3	cup	nonfat milk
2	tsp.	Vinegar
2 1/3	cup	flour
1 2/3	cup	Sugar
1 1/4	tsp.	baking powder
1 1/4	tsp.	Baking soda
1	tsp.	Salt
2		Eggs
1		Egg whites
1 1/4	cup	Mashed very ripe bananas
		(about 3)
3/4	cup	Pureed Dates (replaces ¾ Cup shortening)
1	tsp.	vanilla
1/2	cup	Chopped walnuts, optional
		Powdered sugar (optional)

Wacky Cake preparation:

1. Sift dry ingredients into a large bowl.

2. Add liquids, covering with water.

3. Mix thoroughly, and pour into 8 inch square pan sprayed with Pam. Bake at 350 degrees for 25 to 30 minutes.

4. Frost with your favorite white frosting.

5. ** NOTE: If you aren't fussy, you can make this as a snack cake , mixing, baking and serving from the same pan. No need to spray with Pam.
