Sheath Cake ingredients:

2		Lemons, grated zest only
6	large	eggs -- separated
2/3	cup	Sugar
2	tsp.	vanilla extract
2	lb	Whole-milk ricotta
		Unsalted butter
		flour for pan
		Confectioners' sugar
		Fresh fruit -- garnish

Sheath Cake preparation:

1. Mix together sugar and flour and set aside.

2. Bring to a boil the butter, water and cocoa.

3. Pour over flour mixture and stir.

4. Add buttermilk, vanilla, eggs and baking soda.

5. Mix well and pour onto a cookie sheet.

6. Bake 20 minutes @ 375 degrees.

7. Let cool til just warm and frost with Sheath Cake Frosting.
