Salmon Cakes with Lemon-Herb Mayonnaise recipe

Salmon Cakes with Lemon-Herb Mayonnaise ingredients:

2 cup crumbled cooked salmon fillets
1/2 cup Corn flake crumbs
2 green onions -- chopped
1/4 cup Finely chopped celery
1/4 cup Mayonnaise
2 tbsp. chopped fresh thyme -- or 2 tsp. dried
1 dash Worchestershire sauce
Salt and pepper to taste
1 Eggs -- Large
3/4 cup Mayonnaise
1 tbsp. Lemon juice
1 tbsp. horseradish -- prepared
2 1/2 tsp. chopped fresh thyme -- or 1 tsp. dried
2 tbsp. butter -- (1/4 stick)

Salmon Cakes with Lemon-Herb Mayonnaise preparation:

1. 1. Combine salmon, cornflake crumbs, green onions, celery, 1/4 cup mayonnaise, 2 Tbs. thyme, and worcestershire sauce in medium bowl and stir gently to blend.
2. Season with salt and pepper.
3. Mix in egg. Shape salmon mixture into 6 patties, about 3/4-inch-thick.
4. Arrange on plate.
5. 2. Combine 3/4 cup mayonnaise, lemon juice, horseradish, and 2-1/2 tsp. thyme in small bowl.
6. Season sauce with salt and pepper.
7. (Salmon cakes and sauce can be prepared 1day ahead.
8. Wrap separately and refrigerate.
9. ) 3. Melt butter in heavy large skillet over medium-low heat.
10. Add salmon cakes and saute until brown and cooked through, about 5 minutes per side.
11. Transfer to platter.
12. Serve with sauce.
