Red-Plum Spice Cake ingredients:

1	cup	red plums -- drained (chop plums into quarters; reserve liquid)
2	cup	flour
2	tsp.	baking powder
1/2	tsp.	Salt
1/2	tsp.	Baking soda
1	tsp.	Cinnamon
1	tsp.	-- nutmeg
1/2	tsp.	cloves
1/2	cup	-Shortening
1	cup	Sugar
2		eggs -- well beaten
1/2	cup	red plum liquid
1/2	cup	chopped nuts (optional)

Red-Plum Spice Cake preparation:

1. Sift flour and dry ingredients together.

2. Cream shortening with sugar; add eggs and beat thoroughly.

3. Add dry ingredients and beat well.

4. Fold in plums, plum liquid and nuts.

5. Pour into cake pan approximately 7x11-inches.

6. Bake at 375 degrees for about 35 minutes.

7. Cream Cheese Frosting: Beat 3 ounces cream cheese, softened.

8. Add 2 teaspoons plum liquid and 1-1/2 cups powdered sugar.
