Red Velvet Cake # 1 ingredients:

1 cup butter
2 1/2 cup flour
1 1/2 cup Sugar
2 Eggs
1 oz. Red food coloring
1 tsp. water
2 tsp. Cocoa
1 tsp. Salt; scant
1 tsp. Baking soda
1 tsp. vanilla
1 cup buttermilk
1 tsp. Vinegar

Red Velvet Cake # 1 preparation:

1. Cream butter and sugar, add eggs and beat well; add food coloring and water.
2. Sift flour, salt, soda and cocoa together and add to creamed mixture with buttermilk and vanilla.
3. Add vinegar (fold in lightly).
4. Grease and flour 2 9-inch cake pans.
5. Bake at 350F for about 30 minutes.
6. Here's a good frosting for this cake: CREAM CHEESE FROSTING 8 oz cream cheese, at room temperature 1/2 stick (1/4 cup) butter, softened 2 c confectioneres' sugar, sifted if lumpy 1 tsp vanilla extract Combine the cream cheese, butter, confectioners' sugar and vanilla in a mixing bowl.
7. Beat well, or process until perfectly smooth and spreadable.
8. You will have enough to fill and frost cake.
