Raspberry-Pear Couscous Cake recipe

Raspberry-Pear Couscous Cake ingredients:

Crust
10 tbsp. flour
1 Eggs
3 tbsp. Sugar
6 tbsp. butter
-----FILLING-----
1 lb Ricotta cheese
1/2 lb Cream cheese
1/4 cup flour
1/2 tsp. Salt
1/2 tsp. vanilla
Grated rind of 1/2 lemon
2 Whole eggs -- well beaten
4 Egg whites
3/4 cup Sugar
3/4 cup Crushed pineapple, drained

Raspberry-Pear Couscous Cake preparation:

1. Place couscous in fine mesh steamer or line bottom of steamer with cheesecloth.
2. Moisten couscous with water.
3. Cover and steam 5 minutes.
4. Remove and place in 13 X 9 X 2-inch baking dish, fluffing up couscous to cool.
5. In medium saucepan, sprinkle gelatin on 1 cup water; let stand 5 minutes.
6. Heat until gelatin dissolves.
7. Add apple juice and combine thoroughly.
8. Measure out 2 cups apple juice mixture and add vanilla and cinnamon.
9. Pour over couscous and chill about 30 minutes.
10. To remaining apple juice add raspberries, pears, lemon juice and peel.
11. Gently spoon over couscous mixture.
12. Chill about 2 hours until firm.
