Raggmunk (swedish potatoe pancakes) ingredients:

1 1/2 pk Graham Crackers -- Crushed
5 tbsp. butter, melted
1/2 cup pecans, chopped
1/3 cup Sugar
Mix and press into bottom
-and sides of 10" springform pan.
Bake at 350-degrees for 10
-minutes. Remove crust from oven And place a pan of water in the bottom of the oven.
CAKE
32 oz. Cream cheese -- unwrapped and
-warmed in
Microwave 2 minutes.
1 1/4 cup Sugar
1/4 cup Cornstarch
5 Jumbo eggs -- out of shell and
-warmed in
Microwave 25 seconds
1 cup Sour cream
2 cup Apples, chopped and peeled
1 1/2 tsp. APPLE PIE SPICE (or 1 tsp cinnamon and
1/2 tsp. Nutmeg
1/2 cup CARAMEL TOPPING (such as ice cream

Raggmunk (swedish potatoe pancakes) preparation:

1. Whip together the flour and the salt with ½ of the milk.
2. Add the egg and the rest of the milk.
3. Grate the potatoe and add. Stir. Melt the margarine in a frying pan, put a thin layer of the mixture in the frying pan and fry, when light brown turn and fry the other side.
4. Serve with unsweetened lingonberry jam and some vegetables.
5. Some of the potatoe may be substituted with carrots.
6. This is a weight watchers recipe.
