Pork cake recipe

Pork cake ingredients:

1/2 lb Fatty salt pork *
5 cup flour
1/2 tsp. Salt
1 tsp. Nutmeg
1 tsp. Cinnamon
1/2 cup Sugar
1 cup Minced currants
1 1/4 cup Boiling water
1 1/4 tsp. Baking soda
2 1/2 tsp. baking powder
1 tsp. Ground cloves
2 Eggs
1 1/2 cup molasses

Pork cake preparation:

1. * finely ground put ground salt pork in heat-proof bowl and add boiling water.
2. Set aside for a half hour, stirring occasionally.
3. sift together all dry ingredients except sugar pour pork and water into a large mixing bowl.
4. Beat in eggs, followed by sugar and molasses.
5. Add dry ingredients and currants and stir to mix well.
6. grease and flour 2 9-by-4-inch bread pans.
7. Divide batter between them and bake at 325 °F for 1 hour.
8. Cakes are done when they have the resliiency of a medium-rare steak.
