Pineapple-Carrot-Coconut-Walnut Cake ingredients:

1 1/2 cup Vegetable Oil
2 cup Sugar
4 Eggs
2 3/4 cup Presifted flour
(may need 3c)
2 tsp. Baking soda
1 tsp. Cinnamon
1/2 tsp. Salt
1 tsp. vanilla
1 can Unsweetened crushed Pineapple; well-drained
2 cup Grated carrots
6 oz. Finely chopped walnuts
1 can Unsweetened coconut
Cream Cheese Frosting:
8 oz. cream cheese, softened
1/2 cup butter, softened
1 tbsp. Cocoa
1 lb Box confectioners' sugar

Pineapple-Carrot-Coconut-Walnut Cake preparation:

1. Preheat oven to 350 degrees.
2. Beat oil, sugar and eggs together.
3. Add dry ingredients; blend thoroughly.
4. Add remaining ingredients; mix well.
5. Turn into two 5x9-inch greased and floured pans.
6. Bake for approximately 60 to 70 minutes.
7. Combine cream cheese and butter.
8. Blend in cocoa and sugar; mix well.
9. NOTE: Can be baked in a well oiled 10-inch tube pan for 1 hour and 20 minutes instead of loaf pans.
10. Fold in 2 cups banana slices in place of carrots for a different flavor; do not beat.
