Pineapple Zucchini Cake ingredients:

3	large	Eggs
2	cup	Zucchini; peel/grate
1	tsp.	Salt
1	tsp.	Baking soda
1	cup	Brown sugar (packed)
1	cup	Granulated sugar
1	tsp.	baking powder
2	tsp.	vanilla extract
3	cup	All-purpose flour
1	cup	Crushed pineapple, drained
1	cup	Oil
1/2	cup	Raisins; opt
1	cup	pecans, chopped

Pineapple Zucchini Cake preparation:

1. Mix eggs, sugar, salt, vanilla, zucchini, and soda.

2. Add flour and baking powder, oil and pineapple alternately to the mixture.

3. Add raisins and nuts.

4. Bake at 350 for 1 hour in a 9 x 12 inch pan. Will serve 24. Use icing of your choice.
