Pineapple Upside-Down Cakes preparation: 1. To prepare syrup, drain juice from can of sliced pineapple into a small saucepan. 2. Reserve the pineapple slices for use later. 3. Add pineapple juice concentrate, spices, and cornstarch to saucepan. 4. Mix well. 5. While stirring constantly, bring to a boil over medium heat. 6. Boil 1 minute. 7. Remove from heat, stir in butter, and set aside. 8. To prepare cake, beat together butter (or shortening) and egg until creamy. 9. Add vanilla extract and pineapple juice; beat thoroughly. 10. Measure in flour, baking soda and baking powder. 11. Beat just until blended. 12. Batter will be thick. 13. Set aside. 14. Lightly butter 4 glass pyrex baking dishes approximately 4 in diameter. 15. Spoon 1 tablespoon of syrup and place 1 ring of sliced pineapple into each dish. 16. Top with batter, dividing it evenly in dishes. 17. Spread to snooth. 18. Bake in a preheated oven at 325 degrees for 25-30 minutes or until lightly browned. 19. Remove from the oven. 20. With a sharp knife loosen cake from baking dishes. 21. Allow to cool 10 minutes, and turn out upside-down onto individual dessert saucers. 22. Serve immediately. 23. Serves 4. Useful options:
