Orange Rum Yum Cake recipe

Yield: 1 cake

Orange Rum Yum Cake ingredients:

1 cup pitted prunes -- quartered
1/2 cup Armagnac or Cognac
1/2 cornmeal -- plus more for preparing pan
1/4 cup All-purpose white flour
1 tsp. baking powder
1 pinch Salt
1/2 cup Sugar
2 tbsp. Vegetable Oil
1 tbsp. butter -- softened
1 large Eggs
1 large Egg whites
1/4 cup Nonfat plain yogurt
2 tsp. pure vanilla extract

Orange Rum Yum Cake preparation:

1. NOTE: Use bundt pan Mix and beat at medium speed for 2 mins.
2. Bake in 350 oven for approximately 50 mins.
3. Cool 30 mins.
4. Prick through to bottom of pan several times.
5. FOR GLAZE: Bring to a boil and spoon over cake.
6. Remove from pan after 2 hours.
7. Remainder of juice: When serving cake, heat juice and spoon over individual slice.
8. Add vanilla ice cream on the side.
