Orange coconut frosting recipe

Orange coconut frosting ingredients:

2 cup vanilla Wafer Crumbs
1/2 cup butter or margarine, melted
1 14 ounce pkg Caramels
1 5 oz Can Evaporated milk
2 cup chopped pecans -- toasted, divided
32 oz. cream cheese, softened
1 cup Sugar
2 tsp. vanilla
4 Eggs
6 oz. chocolate chips -- meltd/slightly coold
Whipped cream, optional

Orange coconut frosting preparation:

1. Heat the oven to 350 °F. Toast the coconut on a baking pan in the middle of the oven, shaking the pan occasionally for 10 minutes.
2. Let the coconut cool.
3. In the bowl of a mixer, combine the granulated sugar, egg whites, orange juice, corn syrup, grated orange rind, and salt.
4. Set the bowl over a saucepan containing 3 inches of boiling water, and whisk the mixture until it is hot and foamy.
5. Return the bowl to the mixer and beat the frosting at high speed for 7 minutes, or until it is cool and holds stiff peaks.
6. Makes about 3 cups.
7. For coconut angel food cake, or your favorite cake, cover the sides and top with the orange frosting.
8. Press the toasted coconut onto the sides of the cake.
