Orange Carrot Cake ingredients:

1 cup butter or Marg., softened
2 cup Sugar
1 tsp. Cinnamon
***CAKE ***
1/2 tsp. Nutmeg
1 tbsp. Grated orange peel
4 Eggs
1 1/2 cup Carrots, grated
3 cup flour, sifted
3 tsp. baking powder
1/2 tsp. Salt
1/2 cup Orange juice
Orange slices for garnish
---ORANGE GLAZE---
1 1/2 cup Sifted confectioners' sugar
1 tbsp. butter or Marg., softened
1/2 tsp. Grated orange peel
3 tbsp. Orange juice

Orange Carrot Cake preparation:

1. Preheat oven to 350 degrees.
2. In large bowl, cream butter and sugar with electric mixer.
3. Add cinnamon, nutmeg and orange peel.
4. Beat-in eggs, one at a time.
5. Add carrots and nuts.
6. Sift together flour, baking powder and salt; add alternately with the orange juice.
7. Turn into greased and floured 10-inch tube pan. Bake 60 to 65 minutes, then turn out of pan and cool completely on a wire rack.
8. In a small bowl, beat sugar with butter, orange peel, and enough orange juice to make a slightly-runny orange glaze.
9. Cover top of cake with the glaze and decorate with orange slices.
