Orange Butter Cake ingredients:

1 1/3 cup All-purpose flour
2 tsp. baking powder
1/4 tsp. Baking soda
3/4 cup Dutch Process Cocoa, sifted
1 1/2 tbsp. Instant expresso
1/8 tsp. Salt
3 tbsp. butter -- melted and cooled
2 Eggs, beaten
1 1/2 cup Granulated sugar
3/4 tsp. vanilla extract
1/2 cup Low-fat milk
1/2 cup Nonfat plain yogurt
1/4 cup Semisweet chocolate chips
1 cup confectioner's sugar -- sifted
1 tbsp. Instant expresso
3 tbsp. Dutch process cocoa
4 tbsp. Boiling water

Orange Butter Cake preparation:

1. * Combine first 12 ingredients in a large mixing bowl; beat at low speed with an electric mixer until blended.
2. Beat at high speed 3 minutes.
3. Pour batter in to two greased and floured 8 1/2 x 4 1/2 x 3-inch loaf pans.
4. * Bake at 350F for 45 minutes or until a wooden pick inserted in center comes out clean.
5. Cool in pans on wire racks 10 minutes; remove from pans, and let co ol completely on wire racks.
6. Frost with Tropical Cheese Spread, if desired.
7. Tropical Cheese Spread 1 cup chopped dried mixed fruit 3/4 cup water 2 tablespoons Grand Marnier or other orange-flavored liqueur 2 (8-ounce) packages cream cheese, softened 1/2 cup orange marmalade * Combine first 3 ingredients in a small saucepan; bring to a boil over medium heat.
8. Cover, reduce heat, and simmer 8 minutes or until fruit is soft.
9. Drain well.
10. * Beat cream cheese at medium speed with electric mixer until creamy; add marm alade, and beat until blended.
11. Fold in fruit.
