Norwegian griddle cakes recipe

Norwegian griddle cakes ingredients:

1 cup Brown sugar
1/4 cup butter
2 Eggs
1 1/2 tsp. Baking soda dissolved in
1 1/2 tsp. Milk
1 1/2 cup flour
1/4 tsp. Ground cloves
1/2 tsp. Cinnamon
1/2 tsp. Nutmeg
1/2 lb Candied cherries; chopped
1/2 lb Candied pineapple, chopped
1 lb White raisins
1/2 cup Apple juice
1 lb pecans, chopped

Norwegian griddle cakes preparation:

1. Mix riced potatoes with cream and lard.
2. Chill for 1 hour.
3. Add sugar, salt and flour.
4. Blend thoroughly.
5. Take about 1/3 cup of mixture and form into 2 balls.
6. Continue with remaining dough.
7. Chill balls for 1 hour.
8. On a lightly floured board roll each ball into a paper thin round about 5 inches in diameter.
9. Cook on heated griddle over low heat until very light tan. Turn and cook on other side.
10. Serve hot or cold.
11. All lefsa - sprinkle with hot water and let lay a while, then butter and sprinkle with sugar and cinnamon, fold and cut.
