No-Egg Cake recipe

No-Egg Cake ingredients:

3 lb Ricotta, drained
2 cup Sugar
1/2 cup flour, sifted
Graham cracker crumbs
8 Eggs yolks
1 Grated rind of lemon
1 tsp. vanilla
1/2 cup Cream (optional), whipped
8 Egg whites

No-Egg Cake preparation:

1. Put all ingredients (in order) in one bowl and beat.
2. Bake in greased tube pan for about 55-60 minutes in a 350 degree oven.
3. (some ovens may vary, so check the cake between 50 aand 60 minutes) I frost my cake with a confectionary white frosting with a hint of real coffee put in, and it is absolutely delicious! Hint: To make sour milk, add one teaspoon of vinegar to the cup of milk and let it stand for a couple of minutes.
4. For the liquid shortening, I use Crisco canola oil; it is both healthy and tasty and makes the cake very moist.
