Nectarine-Strawberry Shortcake Torte recipe

Nectarine-Strawberry Shortcake Torte ingredients:

2 cup buttermilk baking mix
2 Eggs
1/2 cup 2% lowfat milk
1/4 cup Sugar
1 fresh lemon peel
1 tbsp. Lemon juice
1 pk Light cream cheese
1/2 cup powdered sugar.
4 California nectarine
1 pint Strawberry
1 Unflavored gelatin
1/4 cup water
3 Fresh mint sprigs

Nectarine-Strawberry Shortcake Torte preparation:

1. For cake: Preheat oven to 375 °F. In large bowl, beat baking mix, eggs, milk, sugar, lemon peel and lemon juice until just combined, about 30 seconds.
2. Pour into greased 9-inch tart or cake pan. Bake 20 to 25 minutesor until toothpick inserted in center comes out clean.
3. Cool on wire rack 10 minutes; turn out on rack to cool completely.
4. For filling: In medium bowl, beat cheese and powdered sugar until smooth.
5. Puree 3 nectarines and all but 5 strawberries.
6. Beat fruit puree into cheese mixture.
7. In 1-cup glass measure, sprinkle gelatin over water.
8. Microwave on HIGH 25 to 30 seconds; stir to dissolve.
9. Stir into fruit-cheese mixture.
10. Refrigerate until slightly thickened.
11. Spread over top of cake layer.
12. Slice remaining nectarine and arrange on top. Garnish with remaining 5 strawberries and mint sprigs, if desired.
13. Refrigerate until ready to serve.
