Native Crab Cakes ingredients:

3/4 cup Graham cracker crumbs
2 tbsp. butter Or margarine
2 Pkg. light cream cheese,(neufchatêl)
1/2 cup nonfat ricotta cheese
3/4 cup Frimly packed brown sugar
1 1/2 cup LIBBY'S® 100% Pure Pumpkin
3 tbsp. Orange juice
2 tbsp. NESTLÉ® CARNATION® Evaporated Fat Free Milk
2 tsp. vanilla extract
1 1/2 tsp. Pumpkin pie spice
1 tsp. Grated orange peel
3/4 cup Frozen egg substitute
1 recipe TOPPING

Native Crab Cakes preparation:

1. Combine all ingredients except scallions.
2. Mix well.
3. Add sliced scallions and mix. Form into eight 2-inch crab cakes.
4. In a 10-inch skillet, melt butter over medium-high heat.
5. Heat butter until hot but not smoking.
6. Cook the crab cakes for 3 to 4 minutes on each side or until golden.
