Nancy's Italian Cream Cake ingredients:

-----chocolate COOKIE CRUST-----
1 1/2 cup chocolate cookie crumbs
3 tbsp. Chopped almonds
2 tbsp. Soy oil
--- OR ---
2 Cookie crumb crusts
- chocolate, ready-to-serve
-----GLAZED ALMOND TOPPING-----
2 tbsp. Sugar
3/4 cup sliced almonds
-----AMARETTO FILLING-----
10 1/2 oz. Pkg. lite soft silken tofu
16 oz. Lower fat cream cheese softened
3 tbsp. EQUAL measure -- OR...
36 -EQUAL packets -- OR...
1 1/2 cup Sugar
6 Egg whites
4 Whole eggs
1/4 cup Amaretto
2 tbsp. vanilla

Nancy's Italian Cream Cake preparation:

1. Cream shortening, oleo and sugar.
2. Add yolks one at a time - beat after each addition.
3. Put soda in buttermilk.
4. Add flour and milk alternately, begining and ending with flour.
5. Add vanilla, coconut and nuts.
6. Fold in stiffly beaten egg whites.
7. Bake in a greased and floured tube pan at 325 degrees for 1 hour.
8. Cool completely.
9. FROSTING: 8 oz. cream cheese 1 stick oleo 1 lb. powdered sugar 1 t. vanilla Cream softened cream cheese and oleo.
10. Add vanilla and beat in powdered sugar a little at a time.
