Marla Gibbs' Carrot Cake recipe

Marla Gibbs' Carrot Cake ingredients:

3 Eggs
2 cup C and H Granulated Sugar
1 cup margarine
1/2 cup water
2 tbsp. Cocoa
1 tsp. Baking soda
1 tsp. Cinnamon
1 tsp. Allspice
1 cup Finely chopped nuts
1/2 cup chocolate pieces
2 Apples, cored and grated or finely chopped (2 cups)
1 tbsp. vanilla
2 1/2 cup All-purpose flour

Marla Gibbs' Carrot Cake preparation:

1. In a mixing bowl, beat raw sugar and eggs thoroughly.
2. Mix in vegetable oil. S tir flour, cinnamon, baking powder, baking soda and salt together.
3. Add to egg mixture, beating until just combined.
4. Stir in carrots, pineapple and pecan.
5. S pread evenly into 2 greased and waxed paper lined 9 inch round cake pans.
6. Bake at 350 degrees for 35-40 minutes or until cake pulls slightly away from the ed ge of pan. Cool 10 minutes; remove cake from pan. Cool on wire rack.
7. In a la rge mixing bowl, beat together the cream cheese, butter and vanilla until light and fluffy.
8. Gradually add powdered sugar.
9. Beat until smooth.
10. Spread top of one layer with 1/4 of cheese mixture.
11. Place second lay on top and spread with frosting.
