Lemon pie squares recipe

Lemon pie squares ingredients:

6 tbsp. Maple syrup
4 tsp. Unsalted butter, melted
2 large Apples; peeled, cored and cut into 1/4 slices
3/4 cup Yellow or white cormeal preferably stone ground
3/4 cup All-purpose flour
1 tsp. baking powder
1/2 tsp. Salt
1/4 tsp. Baking soda
1 cup buttermilk
1 large eggs, lightly beaten
1 tbsp. Vegetable Oil

Lemon pie squares preparation:

1. Heat the oven to 350°F.
2. In a large bowl, combine all base ingredients.
3. Mix at low speed until crumbly.
4. Press in an ungreased 13x9 inch pan. Bake at 350°F for 10 minutes.
5. Meanwhile, to make the meringue beat egg whites in a small bowl on medium speed until soft peaks form.
6. Gradually add sugar 1 tablespoon at a time, beating on high speed until stiff glossy peaks form and sugar is dissolved.
7. Remove base from the oven and spread evenly with lemon pie filling; spread meringue over the pie filling.
8. Return to the oven and bake an additional 15-25 minutes until the meringue is light golden brown.
9. Cool completely; cut into squares.
10. Garnish as desired.
11. 12 servings.
