Lemon Cake Pie ingredients:

2		Eggs
1/2	cup	Apple juice concentrate
1/3	cup	butter, melted
1	tbsp.	Lemon peel, grated
1	tbsp.	Lemon juice
1	tsp.	vanilla
1	cup	flour
1/3	cup	Poppy Seeds
1 1/2	tsp.	baking powder
1/2	tsp.	Baking soda
1/8	tsp.	Salt

Lemon Cake Pie preparation:

1. In large bowl, beat egg yolks and sugar until thick.

2. Beat in the butter, lemon juice and lemon rind.

3. Beat in the flour.

4. Add milk and mix well.

5. In a separate bowl, beat the egg whites until stiff peaks form.

6. Fold the egg whites in the batter.

7. Pour batter into the pie shell and bake at 350F degrees for 55-60 minutes, until the pie is set and browned on top. Cool completely before cutting.
