Krumkaker (Curled Cakes) ingredients:

2 tbsp. Unsalted butter
5 large Eggs, separated
1/2 cup All-purpose flour
3/4 cup Granulated sugar
1/3 cup Plus 2 tb unsweetened cocoa
1 tsp. vanilla extract
1/2 tsp. Salt
1/2 tsp. baking powder
Coffee Cream Filling
1 1/2 cup Milk
1/4 tsp. Salt
1 tbsp. Cold water
3 Eggs yolks
1 tsp. Unflavored gelatin
2 tbsp. Instant coffee powder
1/2 cup Granulated sugar
1 tsp. vanilla extract
1/4 cup All-purpose flour
1 cup Heavy Cream

Krumkaker (Curled Cakes) preparation:

1. Combine all ingredients in order given.
2. Put 1 teaspoon of batter in the center of a preheated krumkake pan. Close the lid and cook for a few minutes, turning the pan once to brown on both sides.
3. Roll the cake while still hot around the handle of a wooden cooking spoon.
4. Makes 12 to 16. Note: These pans can be bought in specialty hardware stores.
