Kim's Coconut Cake preparation: 1. Blend cake mix, pudding mix, water, eggs oil in large mixer bowl. 2. Beat at medium speed 4 minutes. 3. Stir in coconut walnuts. 4. Pour into 3 greased and floured 9-in. 5. layer pans. 6. Bake at 350 for 35 minutes. 7. Cool in pans 5 minutes; remove and cool on rack. 8. Fill frost with Coconut-Cream Cheese Frosting. 9. FROSTING: Melt 2 tbs. oleo in skillet. 10. Add coconut; stir constantly over low heat until golden brown. 11. Spread coconut on absorbent paper to cool. 12. Cream 2 tbs. butter with cream cheese. 13. Add milk and sugar alternately, beating well. 14. Add vanilla; stir in 1 3/4 cups of the coconut. 15. Spread on tops and sides of cake layers. 16. Sprinkle with remaining coconut. Useful options:
