Kim's Coconut Cake ingredients:

Graham Cracker Crust-----
1 cup Graham cracker crumbs
1/2 cup pecans -- chopped
1/4 cup butter -- melted
1 tsp. Granulated sugar
Cheesecake-----
16 oz. cream cheese, softened
2 cup Cottage cheese
1 1/2 cup Granulated sugar
4 eggs -- lightly beaten
6 tbsp. Cornstarch
6 tbsp. flour
1 1/2 tbsp. Fresh lemon juice
1 tsp. vanilla
1/2 cup butter -- melted amp; cooled
1 part Sour cream
Blueberry Glaze-----
1 cup Granulated sugar
3 tbsp. Cornstarch
1 cup Reserved Blueberry Juice -- Canned
31 oz. Blueberries, Canned -- Drained

Kim's Coconut Cake preparation:

1. Blend cake mix, pudding mix, water, eggs oil in large mixer bowl.
2. Beat at medium speed 4 minutes.
3. Stir in coconut walnuts.
4. Pour into 3 greased and floured 9-in.
5. layer pans.
6. Bake at 350 for 35 minutes.
7. Cool in pans 5 minutes; remove and cool on rack.
8. Fill frost with Coconut-Cream Cheese Frosting.
9. FROSTING: Melt 2 tbs. oleo in skillet.
10. Add coconut; stir constantly over low heat until golden brown.
11. Spread coconut on absorbent paper to cool.
12. Cream 2 tbs. butter with cream cheese.
13. Add milk and sugar alternately, beating well.
14. Add vanilla; stir in 1 3/4 cups of the coconut.
15. Spread on tops and sides of cake layers.
16. Sprinkle with remaining coconut.
