Kahlua Chocolate Cheesecake recipe

Kahlua Chocolate Cheesecake ingredients:

Crust
15 vanilla wafers
15 Gingersnaps
3 tbsp. Sugar
1 tbsp. Lemon peel, grated
1/4 cup Unsalted butter, melted
-----FILLING-----
1 tbsp. Unflavored gelatin, plus
3/4 tsp. Unflavored gelatin
1/4 cup Cold water
2 Zest, from lemons
1 Fresh ginger, 1" piece peele
3/4 cup Sugar, plus
2 tbsp. Sugar
salt, pinch
3 Egg yolks, large
3/4 cup Whole milk
12 oz. Cream cheese, at room temperature
1/3 cup lemon juice, fresh
1 1/2 cup Whipping cream, chilled
1 cup Lemon curd:

Kahlua Chocolate Cheesecake preparation:

1. Prepare Chocolate Crumb Crust (directions follow).
2. Preheat oven to 350 °F. In small saucepan, over medium heat, melt chocolate bits with Kahlua and butter; stir until smooth.
3. Set aside.
4. In bowl, combine eggs, sugar and salt.
5. Add sour cream; blend well.
6. Add cream cheese to egg mixture; beat until smooth.
7. Gradually blend in chocolate mixture.
8. Turn into prepared crust.
9. Bake 40 minutes or until filling is barely set in center.
10. Remove from oven and let stand at room temperature 1 hour.
11. Then refrigerate several hours or overnight.
12. Garnish, if desired, with whipped cream and chocolate leaves.
13. Chocolate Crumb Crust: Combine chocolate wafer crumbs, butter and sugar.
14. Press firmly in bottom of 9 inch springform pan.
