Java Cheesecake ingredients:

1 cup butter; No margarine
1 1/2 cup Sugar
6 each Eggs; Large *
1 1/2 tsp. Grated Lemon Rind
8 tsp. rum
4 tsp. baking powder
3 1/2 cup flour, unbleached, sifted
1 x ----butter-cream filling----
1 cup Sugar
3/4 cup ;Water
6 each Egg yolks, large
1 tsp. rum
1 cup butter;NO margarine,Unsalted
2 tsp. butter
1 cup Sugar
1/2 cup ;Water
1 cup Almonds; blanched, Sliced
1/2 cup Apricot jam

Java Cheesecake preparation:

1. Combine crushed zwieback, butter and honey; reserve 2 tablespoons for topping.
2. Press remaining mixture onto bottom of buttered 7 or 8 inch springform pan. Ch ill. Soften gelatin in 1/4 cup water.
3. In saucepan combine egg yolks, 1/2 cup milk, ricotta, sugar, coffee crystals, vanilla and 1/3 cup water.
4. Stir in gelatin mixture.
5. Cook and stir over medium -low heat 20 minutes or until mixture coats a metal spoon; do not boil.
6. Remove from heat; chill until partially set, stirring occasionally.
7. Prepare topping according to package directions, using remaining milk.
8. Fold i n gelatin mixture.
9. Beat egg whites to stiff peaks.
10. Fold in gelatin mixture.
11. T urn into prepared pan. Cover; chill until firm.
12. Remove sides of pan; sprinkle reserved crumbs atop.
13. Serves 10.
