Deco's raspberry cheesecake recipe

Deco's raspberry cheesecake ingredients:

1 3/4 cup Sifted Swans Down Cake flour
2 1/4 tsp. baking powder
3/4 tsp. Salt
1/2 cup butter Or margarine
1 cup Sugar + 2 Tablespoons
2 Eggs
2/3 cup Milk
1 tsp. vanilla
2/3 cup Baker's Fine Grated Or Angel Flake Coconut

Deco's raspberry cheesecake preparation:

1. For crust, in a small bowl, combine crumbs, 3 tbs sugar and melted butter.
2. Press onto the bottom of a 9-inch springform pan. Bake in a 350°F oven for 10 minutes.
3. Cool. For the filling, drain raspberries, reserving juice.
4. Set raspberries aside.
5. In a small saucepan, combine reserved juice, ¼ cup cold water and gelatin.
6. Let stand for 5 minutes.
7. Cook and stir over low heat till gelatin dissolves.
8. Remove from heat.
9. Cool for 10 minutes.
10. In large mixer bowl, beat cream cheese and ½ cup sugar with electric mixer on medium speed till blended.
11. Add reserved raspberries, grand marnier and raspberry-gelatin mixture.
12. Beat on low speed till well blended.
13. Chill till partially set (mixture will be the consistency of unbeaten egg whites).
