Danish apple cake ala katherine ingredients:

1/2 cup butter, softened
3/4 cup Sugar
2 Eggs
1 Lemon, zest and juice of
1 cup flour
1 pinch Salt
5 Apples
2 tbsp. butter
1/4 cup Cinnamon sugar

Danish apple cake ala katherine preparation:

1. Cream the butter and ¾ cup sugar until light and fluffy.
2. Beat in the eggs, one at a time.
3. Add lemon zest to the batter along with 1 tb of the juice.
4. Beat in the flour and salt until it forms a smooth batter.
5. Peel, core, and thinly dice the apples.
6. Toss with the remaining lemon juice.
7. Butter a 9" springform pan. Pour in the batter and top with the apple slices.
8. Dot the surface generously with the additional butter.
9. Bake at 350°F for 60 minutes, or until the cake pulls away from the sides of the pan. Sprinkle with the cinnamon sugar.
10. Let cool on a rack.
11. Serve warm or completely cooled.
12. Per serving: 345 calories, 4 g protein, 49 g carbohydrate, 16 g fat, 9 g saturated fat, 92 mg cholesterol, 172 mg sodium, 2 g fiber.
