Banana cupcakes-mix ingredients:

2	cup	Bake it all mix
1		Eggs
1/3	cup	Granulated sugar
1/3	cup	Milk
1		Banana -- peel/slice
2	tbsp.	butter or margarine --
		-melted
2	tbsp.	brown sugar -- packed

Banana cupcakes-mix preparation:

1. Break egg into bowl, beat and stir in sugar and milk.

2. Add mix gradually.

3. Stir to combine thoroughly.

4. Rub muffin cups well with shortening or use paper liners in muffin pan. Drop about half the batter by spoonfuls into muffin cups.

5. Place 2 or 3 slices of banana on top of the batter and pour melted butter over the fruit.

6. Sprinkle brown sugar over the banana slices in each cup. Drop remaining batter by spoonfuls into muffin cups.

7. Bake in a 400°F.

8. oven about 15 mintutes.

9. Yield: 12 large individual coffee cakes.
