Bailey's Chocolate-Chip Cheesecake recipe

Bailey's Chocolate-Chip Cheesecake ingredients:

***CRUST***
2 cup Graham cracker crumbs
1/4 cup Sugar
6 tbsp. butter -- melted
-----FILLING-----
2 1/4 lb Cream cheese, at room temperature
1 2/3 cup Sugar
5 Eggs, at room temperature
1 cup Bailey's Irish Cream
1 tbsp. vanilla extract
1 cup Semisweet chocolate chips
-----COFFEE CREAM-----
1 cup Chilled whipping cream
2 tbsp. Sugar
1 tsp. Instant coffee powder
chocolate curls as garnish

Bailey's Chocolate-Chip Cheesecake preparation:

1. For Crust: Preheat oven to 325~.
2. Coat a 9 inch springform pan with vegetable c ooking spray.
3. Combine crumbs and sugar in pan. Stir in butter.
4. Press mixture i nto bottom and 1 inch up the sides of the pan. Bake until light brown, usually about 7 minutes.
5. Maintain oven temperature at 325~.
6. For Filling: Beat cream cheese until smooth with and electric mixer.
7. Gra dually add sugar, then eggs one at a time, then Bailey's and finally the vanill a. Sprinkle half of the chocolate chips over crust.
8. Spoon in filling.
9. Sprinkle with remaining chocolate chips.
10. Bake until cake is puffed, springy in the cent er and golden brown, about 1 hour 20 minutes.
11. Cool cake completely in refrige rator.
12. For Cream: Beat cream, sugar and coffee powder until peaks form.
13. Spread mixture over cooled cake.
14. Garnish with chocolate curls.
