Ableskiver (Pancake Balls) recipe

Yield: 4 (dozen)
Time: 15 minutes (Prep. time 5 minutes, Cook time 10 minutes)

Ableskiver (Pancake Balls) ingredients:

2 cup Sifted cake flour
1/2 tsp. Salt
3 tsp. baking powder
3 egg whites
1/2 pint Heavy Cream
1 1/2 cup Sugar
1/2 cup Cold water
1 tsp. vanilla
1 tsp. Almond extract

Ableskiver (Pancake Balls) preparation:

1. Set an ableskiver pan over low heat.
2. Sift together and set aside: Make a well in center of dry ingredients.
3. Add liquid mixture all at one time, stirring until well blended.
4. Beat until rounded peaks are formed: 3 egg whites.
5. Gently spread batter over egg whites and fold together.
6. Test ableskiver pan by dropping on it a few drops of cold water; if drops dance around in small beads, temperature is right.
7. Grease well with butter (About 1/2 tsp. per well).
8. Pour batter into wells, filling about one half full.
9. With a fork turn ableskivers frequently to brown evenly.
10. Do not pierce.
11. Ableskivers are done when a wooden pick inserted in center comes out clean.
12. Serve immediately sprinkled with powdered sugar.
13. If desired, accompany with a tart jam. About 4 dozen balls.
14. Apple Pancake Balls (Ableskiver II) Follow above recipe.
15. Rinse, pare and dice 2 medium-sized apples.
16. Sprinkle about 1 teaspoon of the diced apples over batter in each well.
